Toast St. Patrick’s Day with this Superfood Shamrock Smoothie!
We know that St. Patrick’s Day isn’t traditionally associated with healthy eats, but these green smoothies allow you to get into the spirit of the green-clad Irish holiday without ditching your healthy diet. While stores and bakeries are tempting us with luminescent cupcakes and green-colored ale, we’re taking this holiday as an opportunity to enjoy all things green and healthy.
This smoothie is antioxidant-packed with kale and cocoa nibs and mimics the taste of thin mints. As a result, you get to enjoy all the flavors of the holiday without any of the guilt. The wheatgrass and maca powders are masked by the strong flavor of the fresh mint and cocoa nibs. You can even include your children in on the fun! The bananas offer plenty of sweetness and will tempt them, even if they’re a bit unsure about a green drink. We hope you and your family enjoy this delicious Shamrock Shake!
- 2 frozen bananas
- 2 cups kale, packed
- 1 cup spinach, packed
- 3 tbsp cocoa nibs
- 2 tbsp hemp seeds
- 2 tbsp chopped mint, packed
- 1 tbsp maca powder
- 1/2 tbsp cocoa powder
- 1 tsp wheatgrass powder
- 2 cups coconut milk
- Add all ingredients, in the order listed above, to a blender. Blend until smooth. Serve cold.
- Optional: garnish with extra cacao nibs and mint leaves.
